Since my husband and I are empty nesters, I am constantly striving to create recipes for just two. I definitely don't need extra dessert sitting around so having just enough for two is best. I know this seems counter intuitive but I must show some restraint.
I used pears because that was what I had available but you could use any fruit. Using individual dishes would also work well. Enjoy!
Ingredients
- 2 large ripe pears
- 1/4 tsp salt
- 1/3 cup granulated sugar
- 1/3 cup dried cranberries
- 1/2 cup flour
- 1/4 tsp cinnamon
- 1/4 cup brown sugar
- 1/4 cup granulated sugar
- 1/4 cup chopped pecans
- 4 tbsp butter, melted
Directions
Peel, core and dice the pears and place in a bowl. Add the salt, sugar and cranberries and set aside. (Photo A)
In another bowl, mix together the flour, cinnamon, brown sugar, granulated sugar and pecans. (Photo B) Pour the butter over the mixture and mix until all the ingredients are moistened.
Grease a small casserole dish with butter. A rectangular dish of 7 in. by 5 in. works perfectly. Pour the pear mixture into the dish. (Photo C) Top with the flour and sugar mixture. (Photo D) Bake at 350 degrees for approximately 35-40 minutes or until the mixture is bubbly. Serve with ice cream.
