I'm always trying to find appetizers to take to a party that are easy to transport and take very little time to create. This is one of those appetizers. It is very similar to one my mother created with cream cheese and pecans but I believe the goat cheese and apricots give it just a step up in flavor with the tangy cheese and sweet apricots.
The creamy goat cheese, salty almonds and sweet apricots are the perfect combination. Get in your kitchen and start making this appetizer. It will be the star of your next party or family gathering.
Ingredients
- 8 oz. goat cheese (room temperature)
- 1/3 cup almonds
- 6-8 dried apricots
- 3 tbsp chopped basil
- 1/3 cup apricot preserves
- 2 - 3 tbsp honey
Directions
Chop the almonds, apricots and basil. (Photo A) Combine in a small bowl and pour on a piece of plastic wrap. (Photo B & C) Roll the goat cheese log in the mixture and press gently to coat.(Photo C) Wrap the log in the plastic wrap and return to the refrigerator until firm.
On a serving dish, spread the apricot preserves and place the log on top. (Photo D) Drizzle the honey on top of the cheese log. Serve with crackers, fresh apple slices and or bagel chips.
