You know it is summer when the fresh peaches start appearing at the local markets. Of course peach pie, peach cobbler and peach ice cream come to mind but I love the taste of peaches grilled. Grilling peaches with chicken is the perfect dinner and requires very little work to have a tasty dinner. You don't even have to peel the peaches, but of course you can if you feel the urge. The glaze works well with pork chops too!
Ingredients (6 servings)
- 1 cup peach preserves
- 2 tbsp olive oil
- 1 tbsp soy sauce
- 1/2 tbsp dijon mustard
- 2 tsp chopped garlic
- 6 chicken breast, bone in and skin on
- 2 tbsp olive oil
- salt and pepper
- 6 ripe peaches, pitted and halved
Directions
Combine the peach preserves, olive oil, soy sauce, mustard and garlic in a small bowl. (Photo A) Set aside.
Brush the chicken with olive oil and season with salt and pepper. (Photo B) Put the chicken skin side down on the grill with low direct heat. (Photo C) Cook for 8-10 minutes until the chicken is golden brown. (Photo D)
Turn the chicken over and continue cooking for 20 minutes on medium indirect heat. Brush both sides of the chicken with the glaze and continue cooking for another 8-10 minutes or until done. Remove the chicken from the grill and let it rest for at least 10 minutes before serving.
During the last 8-10 minutes of cooking the chicken, place the peach halves cut side down on the grill for 2-4 minutes. (Photo E) Turn the peaches over and brush with the glaze and continue grilling until the peaches are soft. (Photo F)
