If you are looking for a lemon cake that is moist and bursting with lemony goodness, then this is the cake for you. The lemon flavor is derived from the cake mix, lemon pudding mix and the 7-UP. I am sure you could use another lemon lime beverage, but I prefer 7-UP. In less than 10 minutes this cake can be in the oven. Give this super easy recipe a try and I am sure it will be a family favorite.
Ingredients (12 servings)
Cake
- 1 lemon cake mix
- 4 eggs
- 1 3.2 oz box instant lemon pudding mix
- 1/2 cup vegetable oil
- 1 cup 7-UP
Icing
- 3/4 cup confectioners’ sugar
- zest of one lemon
- 2 tbsp lemon juice
- 1 tsp milk
Directions
Grease and flour a bundt or tube pan.
In the large bowl, add the cake mix, eggs, pudding mix, oil and 7-UP. Mix on medium speed for approximately 2 minutes. The mixture should be smooth. (Photo A)
Pour the mixture into a bundt or tube pan. Bake at 350 degrees for 50 -55 minutes. A toothpick inserted in the center should come out clean when the cake is done. (Photo B)
Let the cake sit for 10 minutes and then remove from the pan and cool on a wire rack. (Photo C)
Sift the confectioners’ sugar to remove any lumps. (Photo D) Add the zest, (Photo E) lemon juice and milk. Stir until the mixture is smooth. Drizzle over the cake.
