It may be hot outside but I still enjoy a warm bowl of soup to satisfy my hunger. Lots of vegetables and a tasty broth is what you will find in my Chicken Tortellini Soup. If you are using a pre-cooked chicken your local grocery, this soup can take less than 30 minutes to put on table. Give this a try and let me know your thoughts in the comment section at the bottom. Ingredients (8-10 Servings)
- 3 cooked chicken breast
- 3 tbsp olive oil
- 1 large onion diced
- 2 stalks celery chopped
- 3 carrots diced
- 2 cloves garlic minced
- 1 tsp salt
- 1/2 tsp pepper
- 6 cups chicken broth
- 14 oz can of diced tomatoes
- 1 tsp dried Italian seasoning
- 10 oz bag frozen Italian green beans
- 9 oz package of fresh tortellini
- freshly grated parmesan cheese
- minced parsley
Directions
Chop the chicken breast and set aside. In a large pot over medium heat, add the olive oil, onion, celery, and carrots. Sprinkle with he 1/2 tsp salt and pepper. Cook until the vegetables are tender. Add the garlic and cook for another minute. (Photo A)
Add the broth, chicken, tomatoes, Italian seasoning and green beans. (Photo B) Bring the soup to a boil and then add the tortellini. Cook for at least 20 minutes.
Serve with freshly grated parmesan cheese and parsley on top of the soup.
