During the warm summer months, I like to use the outdoor grill as much as possible. First, it keeps my kitchen much cleaner and second, my family enjoys the flavors from the grill. I find that grilling pork chops is a great alternative to burgers, steaks and chicken.
This recipe is adapted from Southern Living and is super fast and easy. I used thick chops (1 1/4 inches) but it can easily be adapted to thinner cuts by adjusting the grilling time. My pictures only demonstrate enough for two servings but the recipe is adapted for four.
Ingredients ( 4 servings)
- 4 (1 1/4 in.) pork chops
- juice and zest of lime
- 1/2 pineapple cut into slices
- 1/2 jalapeno pepper diced
- 1 red onion sliced into 1/2 in slices
- salt and pepper
Directions
Pour the juice of 1/2 lime on the pork chops and let stand for at least 15 minutes. This makes the chops extremely tender so don’t skip this step.
Place the onions in a skillet with 1 tbsp olive oil and grill until golden brown and softened. (Photo A) Remove the onions from the heat. Put the onions on a chopping board and cut into small pieces. (Photo C) Combine the onions and dice jalapeño in a bowl and set aside.
Salt and pepper both sides of the pork chops. Grill the pork chops and pineapple on medium high heat. (Photo D) The pineapple should be watched carefully because it can burn quickly. Pineapple should be turned in about 2-3 minutes and then grilled for another 2 minutes. The pork chops should be grilled for approximately 5-6 minutes on each side. Remove the chops from the grill and cover for 10 minutes.
Combine the grilled pineapple in the bowl with the onions and diced jalapeño. (Photo E) Add 2 tsp. lime juice and a pinch of salt. Serve the pineapple mixture on top of the chops. Enjoy!
