As soon as the air outside turns crisp and cool, then I think of comfort foods. My Momma’s Meatloaf is the ultimate comfort food. It’s not exactly the way my mom made it because she always used a package of onion soup mix. I’ve altered the recipe to use onions with the addition of Worcestershire sauce and tomato paste. It’s so much better than using the packaged product. I know Momma would approve of the changes.
I make individual portions and this recipe should make 6 portions. I freeze the extras and take them out of the freezer when I am ready. If you put frozen meatloaf in the oven, bake for an extra 10-15 minutes.

Ingredients (6 servings)
2 lbs ground beef
2 yellow onions chopped
2 cloves of garlic chopped
1/2 tsp dried thyme
2 tsp salt
1 tsp pepper
3 tbsp Worcestershire sauce
1 1/2 tbsp tomato paste
1/2 cup Italian style bread crumbs
1/4 cup water
2 eggs, beaten
bottled BBQ sauce
Directions
Put 1 tbsp of oil in a saute pan and add the onions and salt and pepper. Cook over medium heat until the onions are translucent. Add the garlic and cook one more minute. (Photo A) Remove the pan from the heat and add the thyme, Worcestershire and tomato paste. (Photo B) Let the mixture cool.
Mix the water with the eggs and set aside.
In a large bowl, mix the ground beef and bread crumbs. Add the egg mixture and cooled onion mixture. Mix with your hands until just incorporated. (Photo C) Don’t mix too long or you will make the meat tough.
Divide the mixture into 6 equal portions and shape into a loaf. Place the loaves on a baking sheet and spread BBQ sauce on the top. (Photo D) Wrap any unused loaves in plastic wrap and a freezer storage bag. (Photo E)
Bake at 350 degrees for 45 minutes. Bake frozen loaves for 55-60 minutes.
